half loaf of boxty – diced. Ensure that the size of the cubes is no more than 1x1x1 cm. Otherwise - they won't absorb much flavour.
You can try different vegetables to the ones given below. Cauliflower, broccoli and peas work just as well. Turnip does tend to soften and disintegrate if overcooked while the flavour of parsnip tends to dominate all the other flavours.
Preparation
1. Chop the garlic and fry with the vegetable oil in a saucepan for a few minutes.
2. Peel and chop the onion finely and fry until the onion softens.
3. Peel and chop the carrot finely and add to the frying mixture. Leave frying for a few minutes.
4. Chop the mushrooms finely. Chop the beans into shorter strands. Add both to frying mixture. Cover saucepan and reduce heat. Leave for a few minutes.
5. Add enough vegetable stock to just cover the vegetables. Bring the mixture to the boil. Then when mixture is boiling, remove from heat and add the diced boxty.
6. At this point, mixing a small amount of cornflour in a small amount of water and adding it to the mixture gives a nice consistency to the dish.
7. Allow mixture to cool to an edible temperature and then serve.
